Just before the Powderhorn Park Heart of the Beast May Day Parade, [livejournal.com profile] rutemple and I were talking about tofu recipes. I finally wrote them down, as best I could, and decided to post them so others could look at them too.


Tofu Creole

This, and the recipes that follow, are approximations, not exact formulas. These are meant to be ideas for combinations of ingredients, to be played with, rather than instructions to be followed.

8 oz tofu
1 medium onion, chopped
2-3 cloves garlic, minced
2 stalks celery, chopped
6-8 mushrooms, sliced
½ green pepper, chopped
1 ½ -2 cups pasta sauce, or tomato sauce
1 tsp dried thyme
dash celery salt
pepper and cayenne to taste

Saute the onion in olive oil until just beginning to turn transparent. Add the garlic, saute a few more minutes, and add the tofu. Once the tofu starts to sizzle a bit, add the rest of the vegetables, and saute until softened but not completely cooked. Add the spices, saute a few more minutes, and add the sauce. Cook until vegetables are tender and serve with rice.

Tofu Curry
8 oz tofu
1 medium onion, chopped
2 stalks celery, chopped
6-8 mushrooms, sliced
1-2 tablespoons curry powder
1-2 tablespoons soy sauce (optional)
½ pound fresh or frozen green beans

Saute the onion in vegetable oil until just beginning to turn transparent. Add the tofu. Once the tofu starts to sizzle a bit, add the rest of the vegetables, and saute until softened but not completely cooked. Push the vegetables to one side, and add the curry powder. If necessary, add a bit more oil first, so the curry powder can sizzle a bit. Mix in fried curry powder with the rest of the stuff, and add soy. Add green beans, and cover tightly. Cook until beans are tender and serve with rice.

Tofu Italiano
8 oz tofu
1 medium onion, chopped
2-3 cloves garlic, minced
2 stalks celery, chopped
6-8 mushrooms, sliced
1-2 zucchini, sliced, or halved lengthwise and sliced, depending on size
2-3 whole tomatoes, peeled and chopped, or 1 can diced tomatoes
large pinch oregano, smaller pinch basil, small pinch thyme
dash celery salt
pepper to taste
I think you can see the method here. I start the onions first, the add vegetables in order of how long they take to cook, then add anything that renders liquid, like tomatoes. This can be served with rice or pasta.

I also covet the tofu blueberry noncheesecake that Stephen made for Anne Marie's potluck (he wins!) later that evening.
